You guys got any tips for a brainlet that's playing a pokemon game for the first time? I'm playing fire red and having a hard time trying to level my pokemons.

Patience. Just grind in the grass or dungeon closest to the gym or whatever's giving you trouble. Could take an hour or more. That's just classic JRPGs for you.

For what it's worth, grinding isn't a problem in the later games because the difficulty drops to rock-bottom baby mode.

Yeah I've been grinding for an hour trying to level my nidoking, caterpie and ekans and it's a pain since there's no exp share.

In a lot of Pokemon games you can get away with just 2-4 or so decently leveled Pokemon instead of 5-6. Honestly using any type Pokemon is fine (mono type runs are fun), but if it's your first Pokemon game I'd try to keep it varied or certain trainers or gym leaders will stomp your shit. Nido/Butterfree/Starter/+an electric type is probably a sturdy team.
