Ranching would be the main focus of the game obviously. I think having some of the regular crops from Harvest Moon along with berries and apricorns would be good, but you could go exclusively Pokemon and come up with grass Pokemon to be the "staple crops" of the Pokemon world to go with the berries and apricorns
Which brings us to the Pokemon side of the ranching. Obviously you'd have Miltank and Gogoat for milk, Mareep and Wooloo for wool, Buneary for fur, Torchic for eggs and so on.
I'd consider including breeding, but make it more like the show where it's about raising Pokemon the right way rather than eugenics. Make natures affect their behavior in the overworld, so you'd want docile/gentle/relaxed livestock and a bold or brave "guard dog" Pokemon. If it's not boring then you could include breeding as a job, where you get a request from a Battle Girl for a jolly Meditite, so you catch one from the wild and then raise it properly for her
This might be getting into overambitious territory, but having a battle tower or a regular tournament festival would be nice. You could have an Ace Trainer like marriage candidate locked behind defeating them. Plus having something like that would give a reason for more trainers to be in the small village, giving you more marriage candidates
As for festivals, I'd definitely make them all Pokemon themed. The show has lots of one off festivals surrounding single Pokemon that are important to an area, so it wouldn't be difficult to have as many festivals as the Harvest Moon games have
