XY had a fuckload more people working on Pokemon modeling and animation cause they did like 720 of them that gen. That's why a lot of the models and animations they're still using from then are of generally lesser quality than the ones we got in SM. Come SM, they only did like 80 new ones so they were able to get by with less than half what they used before, but the Pokemon all came out even higher poly and with more diverse idle/attack animations.
The opposite sorta happened with the NPCs. IN XY, they had a super small number of modelers for NPCs, which lead to them reusing the same male and female model for multiple trainer classes by just swapping the colors around.
In SM, they more than doubled that number and introduced fashion for the PC. The NPCs all got a lot more love that time around with a lot more diversity among them.
It looks like S/S is going the same route as SM did, with a lot of work being done on the NPCs to make them diverse while they'll probably only have a team of 20 or so doing Pokemon and only make like 80-100 new ones tops.
