Rescue Team or Explorers, your choice really.
I have a preference for Explorers since the game mechanics are a bit more polished, though.

Start at the beginning with Blue or Red Rescue Team. Next, I'd recommend skipping Time/Darkness and going straight to Sky.

If you wind up loving the series, the prepare to suffer with the rest of us. Mystery Dungeon seems to be dead.

Super refined is a bit exaggerated, though. It's mostly QoL improvements.

Recently just beat Gates for the first time. It wasn't too bad had trouble at a few parts but I understand the gripes people have with it now. Definitely the black sheep of the mystery dungeon games

Red Rescue Team is the best one to start (NDS emulators are a bit complicated and Blue is in DS), then you play Explorers of Sky since it is the best of the three Explorers games.

gates to infinity only for the story and if you're curios about its difference, but it's bad otherwise because it lacks content and it's easier than the previous games
super doesn't lack content and isn't too easy. some like it, but some dislike it because it's different from the other games. personally i like it

I'm so genuinely shocked every time I see anyone praising the story in Gates. I found the worldbuilding either painfully cliché or otherwise uninteresting, the humor flat, the characters any of the above if not also annoying (ironically the partner was an exception to this, I'll admit that), and the twists predictable and safe. The slow text speed with no way to speed it up made the whole thing worse. It's there with the Alola games as something I never want to make myself sit through again, and that's not even going into the sterilized gameplay. It was such a blemish on an otherwise great series.
