Counting legendaries? Because it has to be flying since you can get both Lugia and Ho-oh.

Lugia, Ho-oh, Crobat, Dragonite, Gyarados, +filler (Fearow, Pidgeot, probably some I'm forgetting).

Is the Battle Tower even fun in Crystal? It is the only game I've never owned so I don't know much about this one. Also is it that easy to where you can use a monotype team?

Snorlax with Curse is damn good, but not invincible. You'll need something to fall back on in case of the unlikely event that Snorlax should die. Tauros and Ursaring are generally strong, Miltank and Blissey are defensive powerhouses who can support Snorlax with Heal Bell too, Dodrio can cover your weakness against Fighting-types, Smeargle is a deep bag of tricks, the list goes on. Use Snorlax as your main, and then support it as you see fit.

Any less conventional strategies here? I hear Toxic stalling is really effective in the Battle Tower, as long as you have something for Poison and Steel types.

Just remember there are no abilities, so Alakazam beats Espeon unless you want to run baton pass imo. That team seems pretty good, just lacking in responses to dark types. Wobbuffet can 1v1 most pokemon but a team with multiple dark types would be challenging
