the characters you can do this for include your three rivals, a girl who basically acts as the tutorial for poke jobs, and in the post game, brock and misty.
you can also do it with all the galar gym leaders, but the aforementioned characters are more important apparently.
you get items, trade pokemon, some new item gimmick called postcards, and a ton of cutscenes for doing this.
this information is second hand. the only other shit i've heard was revealed already or in the other leak.
