Lers look at this a little closer:
Grass/Normal

Water/Ghost
This is odd as Scorbunny 3 just nerfs Grookey 3.
Sobble 3 puts up a double resistance to Scorbunny 3.
Grookey 3 only relies on its primary typing to beat Sobble 3, that's without Ice Attacks.
My ideal would be:
Grookey 3 Grass/Dark
Scorbunny 3 Fire/Fighting
Sobble 3 Water/Psychic
So at the start it's the usual triangle and then by stage 3 it can have another triangle that helps resist the primary typings, okay another Fire/Fighting, I could have gone with Ghost, but Sobble 3 could just learn Ghost Attacks in this ideal so Scorbunny being Fire/Ghost is useless in this ideal.
Sobble 3's move set:
1. Psychic
2. Shadow Ball
3. Water Signiture Attack
4. Calm Mind
Scorbunny 3's moveset:
1. Bulk Up
2. Poison Jab
3. Fire Signiture Attack
4. Close Combat
Grookey 3's moveset:
1. Hone Claw
2. Grass Signiture Attack
3. Quick Attack
4. Dark Type Attack
I see Scorbunny as a Blaziken clone, Sobble as the Kecleon clone and Grookey as the Greninja clone.
They all do something interesting in the trailers: Sobble meditates, Grookey watches from above, almost like a ninja and Scorbunny races and parkours everywhere.
