Exeggcute are supposed to look like pile of eggs but, in fact, they are seeds. Also, Exeggutor's heads can fall off and become Exeggcute again so both are most likely just coconuts.

Anything else to explain?

Remoraid is a gun which evolves into turret, probably should evolve into Mantine then as when Remaraids connect to its wings they become fighter plane.
This theme is more visible in beta designs.

Because knight theme goes to Escavalier as Karrablast steals its shell. Without this shell Shelmet becomes very fast so it got ninja theme.
