It's simple enough that a child could pick up the game and beat it, but also complex enough with EVs, IVs, natures, egg moves, and more, that grown adults can get enjoyment out of them as well. I love the teambuilding aspect of pokemon, and the payoff of seeing that team be successful after hours of building it up.
Also the various legitimately difficult challenges that you can impose on yourself are loads of fun. Like trying to collect as many ribbons as possible on a single pokemon, attempting to obtain a Starf berry legitimately in game, and trying to win a nuslocke challenge. It's these kinds of things in the games that keep me interested and having fun with it
Also fuck emerald battle tower with its cheap OHKO dealing pokemon. Am trying to get to 56 for the ribbon right now but keep getting cheesed
