Would you play a Pokemon game where you play as a kid explorer documenting Ultra Space, but the only Pokemon you can obtain in the course of gameplay are Ultra Beasts? Instead of gyms it would be something similar to Totem Battles, with the aim of securing pivotal areas across dimensions for the creation of research outposts (which would, in the post game, serve as more conventional "gym battles").

A whole game of UBs sounds good in theory, but their scarcity is what adds to their coolness/uniqueness. They stick out not just because they're so different, powerful and strange, but because there's only 11 of them. If we saw hundreds of others, they'd lose that value. Poipole already diminishes their value showing that they evolve, too. It would be actually be cooler if they didn't, since that would further differentiate them from Pokémon.
Also you know Game Freak would fuck it up, and there'd be a Pikachu clone. So unfortunately, no.

Just show us more. A spinoff game would probably use Ultra Homeworld as a hub, with 1-2 areas from the ultra space worlds each, and maybe a select few locations from the main games to catch fan favorites like Pikachu, Charizard, Lucario, and Greninja
