Yes. Things stop being canon as soon as they stop showing up in the game. Kanto, Johto, Hoenn, Sinnoh, Unova, and Alola aren't cannon anymore because they're not in Sword/Shield.

Remember when people thought Gyms were gone forever when they weren't in Alola? And here they are in Galar because SM made it really clear that trials were a unique thing to them.

Mega Evolutions are just absent because of the same programming reasons the rest of the Pokédex are. If another game brings back access to all the Pokémon that will include all their forms too.

Galar's "gyms" are gyms in name only. They have trials before you're allowed to fight the Gym Leader.

It's a mix of the two concepts. It's trials, but you fight the Gym Leader instead of a Totem Pokemon.
