Publishers have schedules for printing because other publishers will also be printing with the same manufacturer. Mortal Kombat 11 went gold in the end of January, and was only released in the end of April. Of course, the game disc had only half of the data, and most everything was only playable with a 60GB day-one patch, but yeah.
As a rule of thumb, games usually go gold three months prior to the street release date.
