Even in a game with an active battle system, like Xenoblade for example, you're just gonna smash your strongest attacks immediately if the enemy is weak enough. The real solutions are things like auto-battle, insta-killing enemies weaker than you without a battle, or the ability to simply avoid enemies, all of which are things many games use.
As for braindead bosses, that's really just individual game design that can't be blamed on an entire genre. Yeah, any enemy will be braindead easy if you grind enough, THAT is something you can attribute to the whole genre, but a well-designed boss will be challenging if you're at or below the level curve.
Then long animations and whatnot are really just a personal thing. Some people don't mind them, it's understandable if you do, but a good game will try to make it quick enough to not be annoying, or give you the option to speed things up yourself.
