This is news to me. I just started looking at the manga, and you're completely right. None of the drawings of Mew in Adventures show its mouth, which is unique-- Mew has a mouth in pretty much every other incarnation. It's certainly an odd artistic choice, but that's a seriously fun fact.

False in the games and anime, and I’m pretty sure Mew showed itself to have a mouth too when Mewtwo took a swipe at it and it gasped in shock/pain

Mew does have a mouth in its gen 6+ 3D model and the Mew in Lucario and the Mystery of Mew opens it mouth, but for a long time it was depicted as not having a visible mouth.

I really couldn't tell you why they made this change, I think Mew was more mysterious and godlike without a mouth.
