It reminds me of when FFXV came out and they bragged about some boss you had to fight for literal hours on end to beat. That's not entertaining at all. If you have giant shit like that, they're basically never attainable, which is one direction to go, but I feel like that'd be the next controversy waiting to happen. "You can't actually CATCH every Pokemon in the game?! GameFreak, you lazy fucks, you've gone too far this time!"
At best you'd be able to fight the stuff, and the amount of animation work a game like this would take to account for even a small portion of the currently existing number of Pokemon just means it'll never happen. So basically, yeah it'd be cool, but it isn't practical enough to ever happen, and even if it did it probably wouldn't be fun to play outside the spectacle.
