So how do legendarys work?
Are they one of a kind or are there multiple but they're just extremely rare?

What is the difference between mythical and legendary?

What about Dialga, Palkia, and Giratina? Theyre just legendary, but I feel like that because of the elements they manipulate, there should only be one of each per universe.

Japanese version outright calls important Legendaries "gods". Like, the birds in Pokemon 2000 are called "birds", along with Lugia. However, we later see a whole family of Lugias in the show proper. Similarly, legendary birds nest on other islands, outside of the gods of Orange Archipelago.

There's no such thing as one of a kind Pokemon.

Mythical Pokemon are effectively just legendaries but even rarer, which is why they can only be obtained in events.

However many were created, whether through genetic modification, mutation, or dimensional fuckery.
They're catchable in multiple regions.
Also, Sabrina (in BW2) and Giovanni (in USM) have one.
Trevor and some kid in an Alola Pokémon Center also at least claim to have one.

I doubt the Battle of Legends in PWT is canon unless you believe Falkner has Lugia and Winona has Rayquaza, too. Giovanni in USUM is literally from another universe where he could have captured his own universe's single Mewtwo. So the real answer is "one per universe in the multiverse, unless otherwise stated" since references to Mewtwo are always made in singular context.

imagine not realizing their mythical attributues and abilities are just that - myths. in ancient times people were clueless and attributed to these rare and powerful pokemon super special supernatural abilities, but generally that's not the case

There are weird cases like Reshiram and Zekrom where only one of each canonically exist, since it was the result of a single Pokemon splitting in two, but Hoopa or Solageo can pull dimensional shenanigans to let you catch parallel universe versions of them. Whether or not that still counts as being one of a kind is up to you.

Pokemon (both the games and the anime) is a multiverse. There are an infinite amount of them, but may only be one per universe / timeline / ect seeing as there are Pokemon know to travel between dimensions and time.

Legendaries are just very rare, as they usually exist in biomes that are inhospitable/exceedingly difficult for anyone to reach, such as space.

Take Rayquaza for example - it exists almost exclusively in space/at an extremely high altitude at all times. Its very diet is comprised of whatever the hell exists in the layers of the Pokeworld's atmosphere, therefore it prefers to live "sky high". Nobody is ever recognized in canon as having caught one because it's
>A) exceedingly difficult to reach
>B) extremely powerful
and that's really what the distinction is between legendary Pokemon and everything else. Being difficult to reach and being very powerful.

The reason why lore/canon treats those who have befriended/captured a legendary Pokemon with esteem is because having a legendary Pokemon is essentially a symbol that the trainer themselves is definitely no pushover. It's the equivalent of getting Mother Nature's gym badge.

The verse of Pokemon itself dabbles in time/space shenanigans, so there's really no finite limit to the number of any Pokemon. There could theoretically (and most probably, since GameFreak will siphon as much money from Pokemon as they possibly can) be alternate places where Pokemon are re-typed/have different appearances, or have Pokemon in one dimension that are extinct in another.

There's no way to tell for certain because this franchise has the worst lore, world-building, and consistency. It also has dubious gameplay and plot segregation. Finding non-roaming legendaries in different locations is probably more of fun and convenience thing than a lore thing.
