The main reason people will defend the removal of pokemon from Sword and Shield is because they believe that this was done with the intent of fitting in even more content. Because the game isn't out yet, we have no idea whether or not this is true and we won't know until somebody plays through it and/or reviews it.
I won't ask you to not buy the games or to buy the games, all I'll ask is that you make sure you're getting what you want from your purchase: if pokemon were cut so that Sword and Shield could have the robust postgame you've wanted since XY, go for it. If pokemon were cut for a feature you dislike (i.e. curry) and nothing else, don't buy the game.
I'm waiting for the reviews to come out with my stance being that I won't buy the game so far, but if there's truly something that wows me, I'll buy the game. I've not seen this yet, however, and I'm very skeptical that it will happen.
