So...why did they take away Sirfetch'd's flying type?

Doesn't really matter considering you can just evolve a Farfetch'd, that already knows Fly, into a Sirfetch'd
It's just taking STAB moves away from a Pokemon for no real reason.

We're assuming Fly is available in any shape or form.

I don't get what YOU don't understand about how it lost Flying, it only makes sense.
