The anime doesn't do mirror matches unless the pokemon are clearly distinguishable asides from joke fights like metapod vs metapod. They got around this a couple of times before like Ash's Swellow vs Winona's shiny Swellow, or Charizard X vs Charizard Y in the Kalos league. I can't see that happening here.

Lana achieved her goal and Mallow's is to basically have the best restaurant ever, which she definitely tries to achieve considering she literally works there. Haven't caught up with this series so I don't know Soph's goal, but keep seething though

Mallow won her Grassium-Z while helping Oranguru in his café, including serving the pokémon, harvesting ingredients and even feeding Tapu Koko. She's well on her way to achieving her goal, everywhere the group goes, she's shown speculating/talking about developing new dishes with the local produce.

Lillie's goal was the easiest one of them all that resolved instantly, to stop being afraid of pokemon. Her trauma was instantly cured once she found out that Silvuddy wasn't trying to kill her.

I don't think Tapu Koko is really Kukui's Pokemon, it's just using him as a proxy to battle Pikachu. And Tapu Koko needs a human partner to be able to use a Z-Move itself.

It's likely going to be two special episodes since they typically do that with the anime. We have two weeks between the end of the Sun and Moon anime and the start of the new anime, so they have time to do it that way.

143's summary says it comes down to Torracat and Incineroar. My guess is that Tapu Koko decides to battle Ash in the episode after the exhibition battle, and Kukui's there just to act as its trainer.

Brock's dream was good, they shouldn't have changed it. Pokemon Breeder stuff makes the world feel more authentic and sort gives you insight on a lot of stuff.
Cilan's dream was kinda meh, but it just required him to travel all the time. A somewhat realistic and nice goal. It fit in the context of the anime at the time, just like Brock's.
Iris's dream being a dragon master was actually decent but as I always said in order to do that character justice , you'd have to make her a rival or a semi-protagonist. Even though they dumbed Ash down in BW, his and Iris's ambitions clash too much for her to properly work as a companion. Iris is too "heavy" from a narrative point of view to serve as a support character. Gym Leader Cheren(like he appears in the anime itself) or even N would've been a better choice for Ash and Cilan's third companion but a group of 3 dudes would be criticised for a lack of a female character.

Do you even watch the show you like to shitpost about? All of them have goals/dreams. Mallow wants to be a great chef, and she proved it by serving in Oranguru's cafe to Tapu Koko. Lana wanted to make the biggest bubble and be stronger with her Popplio, and she did achieve that. Sophocles had his fear of darkness that he overcame with the help of his Vikavolt. Kiawe's goal was to be the best fire type trainer and he certainly was close to achieving it. Only Lillie lacked a particular goal, and even then she still had her "overcoming trauma" goal.

It's better than recycling pokemon contests (in a region that has nothing to do with it) or just making them standard pokemon battlers (which would be a huge overkill especially with the large cast). I can't think of giving them any other goal that matches their personalities and the setting.
