It just isn't a nice feeling to see something you love go in a direction that takes away what made you love it in the first place, potentially insulting the original or "replacing" it, which is pretty difficult to avoid when each generation tends to have wildly varying design philosophies.
Also when I said my opinions worsened on certain designs I'm mostly referring to Incineroar which isn't cross-gen at all so my bad on that part, sometimes it's just the direction/execution of an evolution in general.
