I don't know if it's due to lack of imagination, laziness, worries about being 'relatable' or something else, but modern Pokémon does a piss-poor job of building a world where monsters are part of everyday life.

First of all gen 1 was not designed with an anime in mind. New games have to have a setting that is interesting in a cartoon. Second, gen 1 was clearly recycled off a completely different concept. Just the fact you have potions means it was probably supposed to be a generic mideival dragon quest style fantasy game at first which is why the setting is so simple and empty outside of a few small buildings here and there.

If they kept a 2d retro style I would be ok with all the new stuff they put in the games, but the current graphics do a poor job at giving the game an unique vibe and make it look like a generic 3d jrpg instead. 2d graphics would save the game, I'm thinking the ones from HGSS Era would do the job pretty well

It's actually that old Pokémon didn't try to portray those things. There was a Miltank ranch, or a Machop on a construction site, but for the most part Pokémon were these weird little creatures that had minimal relevance for the 99% of people not fighting with them for sport.

Modern Pokémon pays lip service to the idea Pokémon are a vital part of life, but you walk through a city of buildings clearly not designed to be accessible for Pokémon, talk to a laborer doing some task that would have been accomplished in a fraction of the time if he'd just gotten a Pokémon to help, and maybe see one actual Pokémon standing around doing nothing, and the illusion shatters.

Only in Gen 1. By Gen 2 we already saw stuff like the towers and ruins that clearly showed Pokemon were a central aspect of civilization.
