Do people really not understand what's neat about having such a vast roster of possible characters? You can do all sorts of different playthroughs with it, and it's a lot of fun that way.
For instance, in my last playthrough of US/UM, I got 6 mons for my team like so: roll 6 d18, to determine 6 random types. For each of those types, pick my 10 favorite pokemon, then get an egg for each of those pokemon lines. Separate out the eggs by type. Then, for a starter, at the beginning of each island, and after beating Necrozma, I hatched a random egg, going through the types in the order they were rolled. My team was very unpredictable and it was a lot of fun to see what I got. How the whole playthrough went would have been very different if I had rolled differently. And it would have been a lot less fun if there were only 6 fire-type lines in existence. This is what we're looking at with SWSH. Fun runs like that being impossible. That's why the cuts suck.
