In Sw/Sh you can't turn it off because it doesn't exist. There is no EXP share, all parties simply receive XP by default.

You're right, it does make the game easier. Now instead of wasting time trying to level everyone separately, you can do it all at once.
Now the games went from easy to easy with convenience! Instead of asking for difficulty options like Gen 5 had, I'm going to vocally complain about a feature that ultimately doesn't change much with the core issue with Pokemon difficulty because I want to feel some sort of gratification over nothing.

Congratulations having some composure to articulate yourself for once, however your argument is flawed.
Being overleved was ridiculously easy to do with the nu-exp share and made XY and SM a walk in the park. Top that up with Aime/Refresh and you have trAsh Ketchump level plot armor.

Game had to be balanced around people using it and people not using it, that's why those games felt so shit. It's a very awkward balance to strike. It's also why prior games had better balance, because the influence of using EXP share was minimal, and mainly just for training shitmons. It was a lot worse in XY and ORAS than in SM and USUM though, because they had more time to experiment.
With this change, they no longer have to balance the game around people not using EXP share, because it's forced, so it's much easier to balance the game correctly around it.
You can't definitively compare this situation to always using EXP Share in 3DS games, because it fundamentally changes how the games can be played. By limiting the option, it's easier to create a better game.

XY had some hard normal trainer battles like the Furfrou duo and the Fighter/Psychic duo outside Reflection Cave but its still called easy, bosses are more important

I wouldn't say my argument is flawed, actually. Whether you are 5 levels below or 10 levels above, it's incredibly unlikely this disparity in levels will change the difficulty because the core root of the issue is how trainers are designed. You have mono-type trainers everyone and it's very easy to become prepared even without knowing what's coming up. By the time the game introduces more varied teams, you've already reached your 30s where your Pokemon are reaching good damage outputs. The name of the game is type advantages and when you have them it doesn't matter what your level is.
This is why I find complaining about EXP share to be a big waste of time, we aren't tackling the actual issue, we aren't asking for actual options, or teams to have counterpicks, or just moves that help their Pokemon stand a chance against an advantage type. I'd honestly give SM credit for trying things differently, buffed Pokemon with SOS abilities are probably some of the more challenging things the series had, ruined by the fact the game had a nuke button.

Your Pokemon will be higher level than normal but it's not guaranteed to be overleveled compared to NPCs. Go actually watch speedruns.

Pokemon fans are the ONLY modern RPG fans that scream and resist any quality of life changes made by the devs. Imagine actually wanting to painfully lead with a weak pokemon, switch it out, then battle as normal instead of just using the best pokemon for the situation. I cannot understand why you would consider it a point of pride to waste your time in a video game.

It was never an "easy mode." You may as well complain that the game doesn't give you an option to start every battle with your Pokemon at half health.
