Actual scientists set up cameras everywhere relevant to them, multiple cameras. Do you remember all those cool nature documentaries? They require not just days, but MONTHS worth of footage and most of that footage has fuck all going on for days, especially in deep forests or tundras, where animals are extremely spread out. The day you would actually be able to find a rare bird or something and capture its habits on video is an extremely happy one. The fact that we saw two never before seen horses in just the first day of observation is actually ridiculously lucky.
They could've made it more fun, that's for sure. This is not real life after all, it's a video game stream. They could've used it to confirm like a hundred old Pokemon coming back, for example, shit would've been fun. But as far as realism goes, they got that covered.
