It's actually stood on its toes in a lot of poses in anime and game model, and a TCG art shows it getting up from all fours with its heels lifted and standing on its toes. The concept at least exists.
Also, sabertooth tigers - including family ur-example Smilodon - were discovered to be plantigrade for their back feet, with long fingers and semi-opposable thumbs in their front feet seemingly for grappling, longer front legs than back legs, and buff upper bodies/arms - and all this for powering over and wrestling down prey. Incineroar is less modern tiger and more sabertooth cat that happens to be on two legs and makes a lot more sense if you think of it that way (barring bipedalism, but tons of pokemon do that so I won't judge that specific bit).
