Every even generation, we get new Eeveelutions, but since Gamefreak doesn't care that much anymore, do you still think we will get them?

Yea, I believe there won't be any eeveelution(s) in this gen, and most likely, we will never get another eeveelution.
They already broke that pattern in gen 6, releasing just 1 eeveelution instead of usual 2.
Also, if the games did contain any eeveelutions, the leaker would have mentioned them since they are a very popular topic of interest in this franchise.

It sucks we didn't get the last special type (dragon) as an eevelution, but yeah from leaks to trailers to tcg everything seems to imply that we won't get another this generation, so probably never again ever

Absolutely not. Leave Espeon and Umbreon out of that garbage. I don't want to be at GF's mercy for when they want to make the stones available and it makes evolving them boring and sterile. Those two actually have interesting evolution methods that can be done quickly and whenever the player wants to evolve them and it fits with their themes perfectly. I enjoy that and don't want it taken away.

I never have any trouble. I always get mine evolved shortly after I get it. I just use all the friendship raising options available to me except for vitamins. I also only raise eevee that are hatched from eggs. Their friendship level is already high.
