Grookey evo is some cool Gorilla rockstar - Grass/Rock
Scorbunny evo is some cool sports Chad looking guy - pure Fire but forever want Fire/Steel or Fire/Electric
Sobble evo is your standard spy lizard - Water/Ghost

there ok that's basically the perfect ones and you can't hope for anything else

Durr I want my Grookey evo to have 150 base attack mixed bulk with an ability that boosts sound moves by 50% :))) it gets a signature move called "drum bash" that's a 100 base power rock sound move so yeah btw you're fucked.
