More pokemon doesn't immediately mean more content but it sure as fuck means having more options to interact with the existing content for those who want it.
Would you be cool with Doom Eternal removing all the weapons except the pistol, shotgun, and BFG just because you could still complete the game with just those? Or if the next Forza only let you pick between 20 cars that you couldn't customize? Would as many people love minecraft if there was only one way to play the game - no difficulty options everything's stuck on normal, no game rules, only Steve skin, no custom world generation options, only game mode is survival?
Limiting player choice outside of specific situations like appealing to a dedicated niche market by creating exactly what they're looking for is a bad business decision because it means fewer people will be interested in/enjoy your game which will generate lower sales. Yes, everything is a balancing act between quality/quantity/invested resources, but in general if you can appeal to a wider audience with minimal work it's a good thing, and it's a very bad thing if you're pissing off half your customers without giving them something to make up for it.
