That could be refering to the ugly graphics and textures, not resolution.

I'm not even saying I don't believe you, since DK Tropical Freeze and NSMBU had 720p resolutions even though they were simply platformers and Kirby Star Allies on the Switch "claims" is 1080p but is actualy 720p or less most of the time. I just want a real source.

The 720p resolution shit is literally made up misinformation. No one is actually saying that and all the screenshots of the game are 1080p. I could maybe see it being downgraded late in development to 900p but there's no way they're dropping the resolution 3x from earlier builds.

It's probably "1080p with dynamic resolution", since we do have screenshots where stuff looks pixelier than others, so clearly the resolution drops depending on what's going on screen.
