They provide a mechanically analogous experience to RS due to them being the current evolution of the fundamental experience in their time.
LGPE are Yellow remakes meant to bridge the gap between Pokemon Go and the standard experience while also introducing the core series to children, new fans, and those who've lapsed since Gen 1.
The games were made with different things in mind. FRLG can be argued as a better value proposition in raw content terms thanks to their expanded Dex and the Sevii Islands assuming you have no interest in Master Trainers - who can represent a sizable amount of playtime if you want to defeat them all. The gameplay, however, isn't necessarily better depending on who you ask. If your interest is in breeding in post-game play, then you aren't getting anything on that front with LGPE. If you like to Shiny hunt and enjoy the catching mechanic, the Over World Pokemon and Catch-Combo system make Shiny hunting the most engaging its been in a mainline title while also respecting the players time far more than other implementations.
Basically, depending on your interests, your mileage varies.
