Kids games and titles geared towards younger players have gimmicks and that's a fact of life. Especially Nintendo games with one off or two off stuff like Mario having Cappy, and each Zelda game being built around a gimmick (time, seasons, masks, sailing, etc). Even Nintendo's consoles are gimmicks.
Second of all triples and rotations were removed because most people didn't fucking use them online or otherwise so they were wasting space for two generations. They were hard to match for online, and people offline thought they were inferior to doubles and singles. Also gambling was removed because new policies meant the feature needed a higher rating in specific areas so to keep the games kid age rated they needed to cut it so that was specifically done for the kid audience. Also Sun and Moon difficulty wise were perfect for kids. You find them hard because you're not a mouth drooling 8 year old anymore.
