Site says the Gigantamax Meowth isn't obtainable in game under normal circumstances, but doesn't say this for the Gigantamax Pikachu or Eevee. Based on this the Pikachu and Eevee can actually be encountered eventually without needing Let's Go save data, but not the Meowth. It's possible there's no Kanto Meowths whatsoever, and Galar Meowths don't have access to the unique Gigantamax.
