Ok take this with a grain of salt as this is partially just my speculation about sw/sh but also a bit of inside info. so basically one of my friends works for gamefreak as essentially a "game tester" and so he receives portions of the game he is able to play in order for GF to know how the game will be received when gone public. Here is what i know
Sobble in fact does evolve into a spy and becomes Water/Ghost.
Grookey evolves into a drummer gorilla as many have predicted and becomes Grass/Rock
Scorbunny becomes an infernape like pokemon that is more sports orientated. becomes pure Fire.
Nothing suprising there huh
Only one new eeveelution and thats steel. looks sort of like glaceon but like steel armor
Rolycoly becomes Rock/Fire and is a sort of self-powered minecart.
Galarian Ponyta becomes an alicorn when evolved and becomes psychic/flying, again no suprises
duraludon is the 3rd stage evo, the 2nd stage is sort of a fat turtle made out of metal. first stage is just a small cute version of that
drednaw is the final evo and has a preevo that is just a tiny turtle
yampers evo is a greyhound and is quite good as it is extremely fast, sort of like a more physical attacking jolteon
the fish in cramorants mouth is a pokemon and evolves twice into first, a pokemon simlar to basculin and then again into a mososaurus type barracuda.
There is a new Fire/Grass type that is a toad that spits fire.
