First, because we need a way out of Galar shithole and go back to a decent region. And Johto seems rather hard to screw up.
Second, because they made Kanto, so Johto must follow next. The story continues and they can't just cut it short. That's the natural consequence of remaking Kanto, a Johto/Kanto sequel is inevitable.
LGPE were bad games, I agree. But they exist and there's nothing that we can do about it. They created a new version of Pokemon world whose story is left open and pretending that it doesn't exist really doesn't help anything.
There's literally no benefit in not having a new Let's GO title based on Johto. The fact that we won't get it doesn't mean that GF will start making good games all of sudden. They just won't.
