Having accurate reflections for a large map is taxing because you have to render the entire map in the reflection
This was possible in Half-Life 2 because the entire map wasn't that large, so they had the ability to essentially render it twice; where the Wild Area is too large for that to be feasible
So, they have a simple, yet inaccurate, cube map that allows for some form of reflection without a massive performance hit
Stop comparing apples and oranges
Also, the Switch is only barely more powerful than the 360
