Yeah I figured Sobble wouldn’t have any drastic changes for its shiny until Intellion shows up, because I noticed base starters since gen 6 have shinies deliberately colored a different shade of blue until final evolution (froakie is light blue then goes black, popplio is dark blue, then goes blonde).
I figured Grookey would have a forest colors for his shiny though.

Pre-3DS pokemon shines were predetermined with a color code generator, which is why most of them had that awful shade of green.
Pokémon from 3DS and above are modeled which means the textures applied can be chosen deliberately, which is why you get cool shinies like Aegislash or Hawlucha.

they've retconned shinies in the past, notably garchomp who went from being almost exactly the fucking same to actually having a difference now

Yeah, I didn't realize how bad Garchomp's shiny was back during sprite era. It's model really made it more clear.
Gengar's a bit better too, but I think it was more clear back when we had sprites.

They didn't do that. They gave the MEGA a new shiny. It's an entirely new model, they didn't fix jack shit with original Garchomp.

Was there ever an explanation for the Pink Butterfree? That seems like something the anime staff should've adressed considering it looks nothing like a Shiny Butterfree.

Sure you can say they retconned it but then why didn't the fix that when they showed her off again in "I Choose You"?
They gave her the black parts on her bottom wings. Couldn't they have changed her color scheme too?

I guess you're somewhat right, its not a new shiny they just made it stand out more from its original colors starting in gen 6
Charizard would be a better example of a completely retconned shiny it just slipped my mind
