I've had Japanese curry with short-grain, medium grain, and long grain rice.
Medium is by far the best. Long grain is too rough and doesnt stick together well (unless its burnt together) and doesnt absorb the curry, and short grain is too firm. Medium is just right, it's nice and soft and it sticks to the curry very well.
