I think it'll be three

Blue + Blue = Blue Fossil Mon
Red + Red = Red Fossil Mon
Red + Blue = Purple Fossil Mon

I think the "no matter which top and bottom you combine, they can be restored together" aids the fact that it'll there will be one fusion mon

Ya'll are reading too much into this, It's probably on the simpler end of fusing, where both DNA samples will form an individual regardless of its components (Atop+Bbottom/Btop+Abottom).
