Principle. Its a Switch game, so it costs more. Because they can. And because you will pay for it.

Less work on porting mons, more work put into the region and assets for the overworld. Game Freak is unironically a small indie studio with the budget of a tripple A game, but on a tight release schedule. In the end all that matters are the new Pokemon and human characters to sell merch, produce the anime and sell TCG cards.

developing games takes time and money, so game freak decided to only develop what they need instead of wasting their efforts on overhead and releasing a half-baked generation like 6

LGPE sold 11M copies. The first set of games on a console usually sells the most, and it sold 31% lower than the 3DS. Investors aren't going to care if "it still sells" or if "when you factor in the increased price it makes the same amount of profit." They're just going to see the sales numbers plummeted and panic.
