This only seems possible if the models already exist in-game. If they don't then the hackers will have to either make them or use some sort of placeholder model in their place.

I'm sure if this got traction people would pitch in to help

We've known for a long time that the models in SM are stupid high fidelity. Probably not enough for Dynamax models, but people would probably be fine with some slight issues with that if it means they get their favourites back

"Hackerz" already tried and failed too do this with let's go pikachu. You can literally go on youtube to see all the attempts to port the models in etc.

The interesting bits were what pokeballs existed in the game code and what percent complete they were. Like a heavy ball has an icon and name but if you hack it in and throw out the poke in battle the game crashes. That kind of stuff.

It's entirely possible to rip the models, textures, and animations from Sun and Moon and put them in Let's Go. The conversion is the hard part, but it's probably do-able.

Bro, the 3DS models are what even Gamefreak is using. Some with new textures.

ESRGAN can automatically redo the textures in HD.

Only the textures need to be redone
The models are the same since gen 6
At worse they would have to convert the model from the format used by the 3ds to the one used for the switch
