If they do another HG/SS game again I would be all for it if it had the soul HG/SS had but I wish they had updated the difficulty and pokemon availability which were both pretty bad in the remakes due to actually being too faithful to the original material.

Unfortunately, he can't. The problem isn't with Ohmori or Masuda or any one individual (although Masuda's attitude hasn't helped), but the fact that the Pokemon Company has turned the franchise into a well-oiled machine designed to shit out games on a yearly schedule as the linchpin of a multimedia empire. The profit incentive isn't in the games being good, but in them being just adequate enough to continue selling the anime/TCG/merchandise. If Morimoto were put at the helm of a game as rushed as Sword and Shield were, it wouldn't be a whole lot better. Whoever directs Gun and Knife or whatever the enhanced versions are called will probably be able to make a game closer to what they wanted to make here due to the engine already being established, but I doubt it would restore the cut content or anything.

That wasn't true in 1999, it's still not true now, Kanto was thoroughly butchered and barely takes 2-3 hours to finish.
