Dead coral is technically a form of sedimentary rock. Living coral isn't a rock at all. By your argument, normal Corsola, shouldn't be a rock, but dead Corsola absolutely should be.

I personally prefer the Unbound form myself, but damn. Pallossand isn't too bad, but it is a goofy design. It's a shame Dhelmise wasn't Ghost/Steel, or something. Being another Grass/Ghost in the same generation as Decidueye kind of sucked.

Galarian Corsola absolutely should have been Ghost/Rock. There's no reason at all for it not to have been. It would have gave us a unique typing which we haven't had yet and it would have fit that type perfectly.
