If you want to do it I think you should try. I started one for Pokemon Sun when it came out for my first play through, but gave up nuzlocking half way through because I ended up with a team of old mons and I really wanted to try some of the new ones. I love nuzlockes and tend to do them on replays. I wouldn't worry about it being too easy because even if there is auto heals and experience shares, you are still going in blind. You don't know levels, or when battles are, or what you're facing. I found my Pokemon Sun nuzlocke as long as I did it hard, even if the game was easy. It was neat going in blind and not knowing.
You would just need to set some parameters. First, determine if you'll be bothered by not choosing your own pokemon. That's what killed the Pokemon Sun run through for me: I had like no new pokemon. If that doesn't bother you, a nuzlocke should be fine. You also need to determine what is an encounter for you: will you count overworld pokemon, or just random tall grass encounters? I recommend only counting tall grass encounters.
