No it technically didn't. The ones you transfer in will still have it. This only affects Bisharp that originate from Sword and Shield.

No it won't, that only happens if it knows a move that doesn't exist in SwSh like Pursuit. There's zero indication that you can't just transfer in a Bisharp that already knows Knock Off.

The precedent is that if a move is valid within coding, a Pokemon will be able to use it even if it could only learn the move from prior generations (i.e. Dragonite with Extremespeed).

Of course this is SwSh, so precedent doesn't matter.
