Are grass starters the canon choice in all games or just these three? What's the big deal with water starters irrelevancy? (no MC's starters but no final bosses' starters either)

I don't like that. The aces of Lana, Mallow, and Acerola are Araquanid, Tsareena, and Palossand, not the totem pokemon that appear in their trials.
Lusamine doesn't use Nihilego either. Her ace is Bewear.

Blue = LGPE girl
Leaf = FRLG female protagonist

Gen I (Red as protagonist)

>Professor Oak: Unused starter (unused idea so whatever, it doesn't count)
FRLG (Red as protagonist)

But it's at least fair to say that Red almost never gets Squirtle, Green never gets Bulbasaur, and the girl/Leaf.Blue never gets Charmander as their starter in any media.

Red's canon starter is a mess, he has both Venusaur and Charizard in a lot of media, you can argue Venusaur because it appears more in the mainline games, but that's just stupid when he's Red and the other fag is Green.
There's offiical art of gen 7 protag with both Decidueye and Incineroar, and Masked Royal technically doesn't use a starter, Kukui does, and if you choose Litten his Primarina is programmed to always be female, so that's still debatable.
I don't know about gen 8 but having Leon with 2 fire staters is a little lame honestly.

There's an argument to be made that the character Red gets the green starter and that the character Green gets the red starter. Sounds better than Red get the red and Green gets the blue, though that would work internationally.

Yes, and that's fine, but as we passed 1996, later media and illustrations were just as content to give him Charizard. I'm fine with Gen I Red getting Bulbasaur and FRLG Red getting Charmander because it's less of a headache and they give him Charizard more consistently in later media.

I think all Galar starters actually work well with Hop and Leon since there's no feminine starters, so there are no 'canon' starter for Gen 8.
But Cinderace is clearly set up as the shilled starter, so it's closest to Gen 8's canon starter for you.

I never argued against that, I just said that it's stupid how the Red character takes the green starter and the Green character takes the Red.
That's why I always consider yellow the canon with him having all 3, better for everyone that way in my opinion.

Fun fact, when it comes to trainers with different teams depending on your starter choice they always program the 3 versions at same time, but in Leon's case the version of Leon with a Cinderace is programmed "eariler", the versions of him with Inteleon and Rillaboom are programmed 40 spots later
