How did X and Y get away with only having hops instead of actual move animations? I know that it's worse that Sword and Shield still have it when on Switch but surely these games deserved some backlash for this?

Even by 3DS standards this animation is really, really terrible. Did you all really think it was acceptable?

that was more or less what sprites had, so the graphical jump was enough to satisfy people. people were too busy thinking "holy shit 3D pokémon" to care about the details

Sounds like they had very low standards. I was in the middle of a multi-generation break from Pokemon during this time period so I wasn't around for when this got revealed, but I sure as hell wouldn't have been okay with it.

What about Sun and Moon though? I don't have a webm to link but I'm fairly certain they kept the hop animation too, the same one still used in SwSh.

It was excused in XY because it was the jump to 3D and we assumed it was a place holder to be fixed in the next game. It was bashed in Gen 7. It's an embarrassing mess in Gen 8.

The real reason is because they actually made like 720 models, it was the first full 3D game, and in new hardware to boot.
And it wasn't completely acceptable, XY still get a lot of shit, are considered the worst in the franchise and game freak even skipped the third version.
It started being a problem around sun and moon/ORAS, suddenly they didn't had to make so much shit, and it wasn't their first game, yet they continued this and many other issues, lots of people were starting to get pissy.

Now there's no fucking excuse, yet they cut over half the pokedex to improve the animations, in their own words.

Because that's the animation for double kick. It's never going to change and it's a shit move anyways. I'm not a shill but i'm also not going to waste my energy tripping over an animation for a move i'm going to delete after level 25 anyways. That's like complaining that ember doesn't have a cool animation.

However, at the time, we all kind of grudgingly accepted the fact that they were the first 3D pokemon games as an excuse. We had also just come off of BW2 and were hopeful that an eventual Z version would have just as many improvements.

Then there was no Z, and it's only been downhill from there.

We also coped with the idea that these were so high-poly that they would just have to re-used them (which they have) for the future gens and allow them to put more effort into other parts. I remember the hype season for X and Y; The prerelease season got a ton of good press that GameFreak has yet to match again. People were willing to ignore the flaws because its good points seemed so good at the time.
I am eternally amused at how Gen 3, 4, and 5 all had vocal haters when they were released, but now people look back on them more fondly. WIth Gen 6 and 7, the total opposite happened.

It was believed it was just a side effect of their first fully 3D title but the problem is that they never got better they just remained the same/doubled-down. People were willing to forgive their first 3D games (or even Gen 6).

The "positive" came from fair weather fans showing up for a generation of for what's popular and ducking out of discussion in a year after release. Then the actual fans opinions are revealed and become the general sentiment.

It sounds dumb af to say, but in all honesty, there's a big difference between them and long time fans. It's why you have people like OP pretending as if there was no backlash just because they weren't there to experience and didn't see trending Twitter hashtags bashing GF.

For some perspective, like every one here is saying, we were willing to take the bad with the good. What I'm surprised is so hard for casuals or someone like OP to understand is maybe, just maybe, the removal of Pokémon was a line that should never have been crossed because now everything GF does with a game is under the microscope of "removing over half of all existing Pokémon better be worth betraying the very foundation's of the franchise: catching them all" and low and behold GF is suffering the consequences for it.
