Something I loved about pokken is that it actually gave pokemon texture, so their models didn’t look like plastic blobs. You could imagine what they felt like.

Dude it was developed by Bandai Namco, not gamefreak. Are you aware how successful Tekken is? Gamefreak doesn't have that sort of money/resources.
