I'm playing Sword right now. Yes, I suck at it. How do I catch Pokemon levels 20+ ? I only have access to Great Balls. I get their HP down to like 1 or something and they still break free.

I'm new to this and so lost, sorry.

The catchrate is the difficulty level for capturing pokemon. It's why in previous games you could toss a pokeball at a caterpie and catch it without weakening it, while a sleeping 1HP legendary still needs ultra balls.

In SwSh, it seems as if they fucked with how the catchrates work, and now it doesn't matter if you're trying to catch a shitty mon. If it's "too high level," the game busts your balls on trying to catch it.

You can't catch the Pokemon unless you have the badges for it. They literally block you in this gen from catching them. It says "They wont drop their guard", but that's just a fancy way of saying "No, you aren't allowed that one."
