What are some ways to challenge yourself in this game?
I heard these games were ridiculously piss poor easy thanks to the Exp. Share, so any semblance of challenge would have to be self imposed. Maybe rotate between two teams and switch them out every now and then? Monotypes?

Don't use party of 6 at least in early, don't use items, don't heal yourself in battle, minimize the use of pokemon centers, don't use candies, curry or whatever shit that gives experience, don't grind, try to avoid trainers, don't capture to fill dex before postgame (it gives exp).

It's the same as literally every other pokemon game
Try a nuzlocke, avoid grinding (the level curve is actually pretty steep if you avoid capturing the wide variety of pokemon available), monotype challenges, don't use dynamax, don't use healing items in battle and don't camp to heal up

I find the trek through routes more demanding than previously, mostly because I try to catch everything and this game has pretty high level wild mons

They really do, it's strange
I'd beat a Gym, then go to the next route and find Pokemon whose levels either match or even surpass the Gym I just beat
It's almost like they got it backwards, where it's the upcoming Trainers who are supposed to match then surpass the previous Gym's levels and the upcoming Pokemon are under the curve
