not only can you not see them in the over world, and no follow mons.
There's only two ways to hunt (so far) breeding or chaining.
In XY (the best gens for shiny hunting) you had Chain Fishing, Breeding, Horde Encounters, Friend Safari and Radar Chaining. They all offered unique situations and some required different team comps.
They all also featured different levels of reward, rarity and ease. Friend Safari was easy and would get you 3 max IVs but was limited in what you could catch. Chain Fishing was fast but took a little bit of skill, and wouldn't have great IVs.
Even SuMo got it at least somewhat right by adding in SoSing.
This gen hasn't added anything except a knock off dex nav.
